Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1 inch cubes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 Tablespoons olive oil
  • 2 cups chicken broth
  • 1 cup salsa verde
  • 1 4oz can diced green chilies
  • 1 cup half and half or milk
  • 3 cups dried penne pasta
  • 1 1/2 cup Monterey jack cheese, shredded
