Bisquick Muffins: Your Go-To Quick Bake

This incredibly simple muffin recipe relies on just a handful of ingredients, making it significantly faster and easier than traditional muffin recipes, such as Chocolate Chip Muffins made from scratch. The magic lies in the Bisquick mix, which provides the perfect blend of dry ingredients, ensuring consistent results every time. The outcome? Beautifully fluffy and delightfully tender muffins that are robust enough to hold a variety of mix-ins.

Today, we’re diving into a classic: chocolate chip Bisquick muffins, a perpetual family favorite. However, the beauty of this recipe lies in its versatility. You only need about 3/4 to 1 cup of your chosen additions. Imagine fresh, juicy blueberries, sweet raspberries, tart strawberries, or even earthy blackberries folded into the batter. Each option transforms these simple muffins into a new culinary adventure!

Simple Ingredients for Scrumptious Muffins

Gathering your ingredients for these easy Bisquick muffins is a breeze. Most of these items are probably already in your pantry or fridge!

  • Bisquick Mix: The star of our show, providing the dry foundation and leavening.
  • Granulated Sugar: For that essential sweetness that makes muffins a treat.
  • Milk: Adds moisture and helps bring the batter together. Any type of milk (dairy or non-dairy) will work.
  • Melted Butter: Contributes richness and a lovely tender texture. Ensure it’s slightly cooled before adding to avoid cooking the egg.
  • Egg: Acts as a binder and helps with the muffin’s structure and rise.
  • Chocolate Chips or other mix-in: Your choice for customization! We love semi-sweet chocolate chips for a classic touch.

How To Make Perfectly Fluffy Bisquick Muffins

For the exact measurements and a convenient printable recipe card, make sure to scroll down to the bottom of this post!

  1. Prepare Your Pan and Oven: Begin by preheating your oven to 400ºF (200ºC). Prepare a standard 9-cup muffin tin by greasing it with non-stick spray or lining it with paper liners. This ensures your muffins release easily after baking.
  2. Combine Dry Ingredients and Mix-ins: In a large mixing bowl, whisk together the Bisquick mix and granulated sugar. Now, gently stir in your chosen mix-ins (like 3/4 cup of chocolate chips). Coating the mix-ins in the dry flour mixture is a clever trick! It helps prevent them from sinking to the bottom of the muffins during baking, ensuring even distribution.
  3. Whisk Wet Ingredients: In a separate 1-cup liquid measuring cup, measure out the milk. Crack in the egg and whisk them together thoroughly until well combined. This pre-mixing of wet ingredients helps prevent over-mixing the final batter.
  4. Combine Wet and Dry: Pour the milk and egg mixture, along with the melted butter, into the bowl with your Bisquick mixture. Stir everything together just until combined. It’s crucial not to overmix here! A few lumps are perfectly fine and even desired for tender muffins. Overmixing develops gluten, leading to tougher muffins.
  5. Fill Muffin Cups: Divide the batter evenly among the 9 prepared muffin cups, filling each about two-thirds of the way full. If using extra chocolate chips or other toppings, sprinkle them on top now for a beautiful finish.
  6. Bake to Golden Perfection: Bake for approximately 18-22 minutes, or until the tops are lightly golden brown and spring back when gently touched. A toothpick inserted into the center should come out with a few moist crumbs, but no wet batter.
  7. Cool and Enjoy: Once baked, remove the muffin tin from the oven and let the muffins cool in the tin for about 5 minutes. This allows them to set slightly. Then, carefully transfer them to a wire rack to cool completely. Enjoy them warm, or store for later!

Mini Bisquick Muffins: Perfect Bite-Sized Treats

Absolutely! This recipe is incredibly adaptable for making mini muffins, which are perfect for smaller appetites, parties, or just when you want a bite-sized treat. While the standard recipe yields 9 full-sized muffins, you can easily get closer to 24 mini muffins from the same batch, depending on how full you fill each cup. When making mini muffins, I highly recommend using mini chocolate chips or finely chopped other mix-ins. This ensures that every delightful little muffin gets a generous amount of your chosen addition, rather than having large pieces that might overwhelm the small size. Adjust the baking time, as mini muffins will cook faster – typically 10-15 minutes. Keep a close eye on them and use the spring-back test for doneness.

Storing Your Homemade Bisquick Muffins

To keep your Bisquick muffins fresh and delicious, proper storage is key. Always store them in an airtight container at room temperature. They will maintain their quality for 3-5 days. If you find yourself with leftover muffins and want to extend their life, freezing is an excellent option. I like to individually wrap each muffin in plastic wrap or foil, then place them in a freezer-safe plastic bag or container. They will last beautifully in the freezer for up to 4-5 months, making them perfect for meal prepping quick breakfasts.

When you’re ready to enjoy a frozen muffin, simply take it out to thaw on the counter for an hour or two. For a quicker option, microwave a single muffin for approximately 30-60 seconds (depending on your microwave’s power) until warmed through. They’ll taste almost as fresh as the day they were baked!

Expert Muffin Baking Tips for Success

Achieving the perfect, tender, and fluffy muffin every time is easier than you think with these simple tips:

  • Muffin Liners – To Use or Not To Use?: Muffin liners are often a matter of preference. For most simple muffins like these Bisquick ones, they are completely optional. A good non-stick spray is usually sufficient to ensure your muffins pop out perfectly without sticking, minimizing waste and potentially saving you money. However, for more delicate or very moist recipes, like Double Chocolate Cheesecake Muffins or Gingerbread Cheesecake Muffins, liners can be helpful for structural integrity and easy handling.
  • Avoid Overmixing at All Costs: This is perhaps the most critical rule for tender muffins. As soon as all the dry ingredients are just incorporated into the wet, stop mixing! A few lumps in the batter are perfectly normal and actually desirable. Overmixing develops the gluten in the flour, which leads to a tough, chewy, and dense muffin rather than the light, fluffy texture we all crave. By whisking the egg and milk separately before adding them, you reduce the amount of stirring needed later.
  • Testing for Doneness: Keep a close eye on your muffins as they bake to prevent them from becoming dry and overdone. Muffins are typically ready when their tops are lightly golden brown and spring back when gently pressed with a fingertip. You can also use a wooden toothpick inserted into the center of a muffin; it should come out with some moist crumbs attached, but no wet batter. Remember, muffins continue to cook for a few minutes after they’re removed from the oven, so it’s better to slightly under-bake them than to over-bake.
  • Cooling Properly: Don’t leave your hot muffins in the tin for too long after baking. Allow them to sit in the muffin tin for about 5 minutes to set, then transfer them to a wire rack to cool completely. Cooling on a wire rack allows air to circulate around all sides of the muffins, preventing them from becoming soggy on the bottom from trapped steam.
  • Room Temperature Ingredients: While Bisquick is quite forgiving, having your milk and egg at room temperature can help them incorporate more smoothly into the batter, leading to a more uniform texture.
  • Filling Muffin Cups: For beautifully domed muffins, fill your cups about two-thirds to three-quarters full. Overfilling can lead to muffins that spill over and merge together.

Endless Bisquick Muffin Variations: Beyond Chocolate Chips!

The beauty of this Bisquick muffin recipe is its adaptability. While chocolate chips are a classic choice, the possibilities for customization are truly endless. Get creative with these ideas:

  • Other “Chips” & Candies: Explore a world of flavors with different types of baking chips! Try white chocolate chips, butterscotch chips, peanut butter chips, or even chopped toffee bits. You can also fold in chopped candy bars for a truly decadent treat.
  • Fresh or Frozen Fruit: Berries are always a hit! Blueberries, raspberries, chopped strawberries, or blackberries work wonderfully. You can also try diced apples (toss with a pinch of cinnamon!), mashed bananas, or chopped peaches. If using frozen fruit, there’s no need to thaw it – just gently fold it into the dry ingredients to prevent excessive color bleeding.
  • Nuts & Seeds: Add a delightful crunch with chopped pecans, walnuts, almonds, or even a mix of your favorite nuts. For an enhanced flavor, lightly toast the nuts before adding them. Chia seeds or flax seeds can also be incorporated for a healthy boost.
  • Warm Spices: Infuse your muffins with comforting aromas. Add 1-2 teaspoons of ground cinnamon, a pinch of nutmeg, or even a pumpkin pie spice blend to the dry ingredients. For an extra touch, sprinkle a mixture of cinnamon and granulated sugar over the tops of the muffins before baking.
  • Citrus Zest: Brighten up your muffins with the fragrant zest of lemons, oranges, or limes. It adds a lovely fresh zing without making the muffins overly tart.
  • Sweet Fillings: Create a surprise center! Fill the muffin cups about halfway with batter, then add a spoonful of Nutella, a dollop of Mixed Berry Jam, a spoonful of peanut butter, or even a cream cheese swirl. Top with the remaining batter and bake.
  • Crunchy Toppings: Before baking, sprinkle the tops with coarse sugar for a sparkly, crisp crust, or create a simple streusel topping with flour, sugar, butter, and cinnamon for added texture and flavor.
