On a sturdy baking sheet, thoroughly toss the whole garlic cloves (still unpeeled) and the shallots (still encased in their papery skins) with the olive oil. Bake for 20-30 minutes, or until the shallot skins appear beautifully browned and golden, and the garlic cloves feel incredibly soft when gently squeezed through their skins.
