Ingredients 

  • 1 9 inch pie crust

For the Cheesecake

  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 whole large egg
  • 2 Tablespoons rainbow sprinkles

For the Mousse

  • 8 oz cream cheese
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 4 Tablespoons rainbow sprinkles

Instructions 

  • Preheat oven to 350 degrees F (175 degrees C). 
  • Place a large, rimmed baking sheet on the bottom rack of the oven. Fill it halfway with water to create a steam bath, which helps prevent the cheesecake from cracking. 
  • Roll out your pie dough and carefully place it into a buttered 9-inch pie plate. Refrigerate the crust while you prepare the cheesecake filling. 

For the Cheesecake

  • In a large bowl, using an electric mixer, beat the softened cream cheese until it is smooth and creamy. Add the sugar and vanilla extract, mixing until fully incorporated and smooth.
  • Mix in the large egg, beating just until it’s fully incorporated. Be careful not to overmix the batter. Gently fold in 2 tablespoons of rainbow sprinkles.
  • Pour the cheesecake filling evenly into the prepared pie crust. 
  • Carefully place the pie plate in the center of the oven, above the water bath. Bake for 30 minutes. The cheesecake may puff up slightly during baking but will flatten as it cools.
  • Remove the cheesecake from the oven and transfer it to a wire rack. Let it cool at room temperature for 1 hour. Afterward, refrigerate it for 2-3 hours, or until completely chilled and set.

For the Mousse

  • Using a whisk attachment on your stand mixer or a hand mixer, beat the heavy cream and powdered sugar together until stiff peaks form.
  • In a separate bowl, beat the 8 oz cream cheese until creamy. Add the sugar and vanilla extract, mixing until smooth and well combined.
  • Reserve 1/2 cup of the prepared whipped cream for garnish. Gently fold the remaining whipped cream into the cream cheese mixture until just combined. Stir in 2 tablespoons of rainbow sprinkles and spread this mousse evenly over the top of the chilled cheesecake. 
  • Sprinkle the top of the mousse with the remaining 2 tablespoons of sprinkles. Using the reserved whipped cream, pipe or swirl around the edges of the pie for a beautiful finish. Serve chilled.
