For my contribution, I wanted to share something that perfectly captures the essence of summer: a delightful frozen treat. As the temperatures rise, my craving for something cool and refreshing becomes almost constant. Most days during this season, it’s hard to resist a taste of sorbet, ice cream, or my personal favorite – frozen yogurt. My husband and I often find ourselves heading to our local frozen yogurt shop for an evening treat. He usually gravitates towards tropical sorbets, while I’m a dedicated fan of a unique combination: cookies-n-cream blended with honey dew. Once I stumbled upon this magical pairing, no other flavors could quite compete.
Embracing Apricot Season: The Inspiration for This Recipe
This year, I found myself completely captivated by the fleeting beauty and flavor of fresh apricots. Knowing their season is all too short, I jumped at the opportunity to capture their unique sweetness and subtle tang in a novel way. This led to my current obsession: apricot frozen yogurt. Unlike many complex desserts, this recipe couldn’t be simpler, allowing the natural goodness of the apricots to truly shine. Your ice cream maker handles most of the hard work, leaving you free to enjoy the incredible rewards. It’s an ideal way to savor the peak flavor of these beautiful stone fruits before they disappear from the markets.
Why Homemade Frozen Yogurt is a Summer Essential
Making your own frozen yogurt at home offers a multitude of benefits, especially during the warmer months. Firstly, you have complete control over the ingredients, allowing you to choose fresh, high-quality produce and adjust sugar levels to your preference. This results in a healthier dessert option compared to many store-bought varieties, which can be loaded with artificial flavors and excessive sugars. Secondly, the process is surprisingly straightforward, requiring minimal active cooking time. Most of the magic happens in your blender and ice cream maker. Lastly, the ability to customize flavors and add-ins means you can experiment endlessly, creating unique frozen treats tailored to your taste buds. This apricot version is just the beginning!
Crafting Your Apricot Froyo: What You’ll Need
Before you begin, gather these essential ingredients. You’ll find the full printable recipe card with precise measurements at the bottom of this post.
- Fresh Apricots: The star of our show! Choose ripe, fragrant apricots for the best flavor. They should be soft to the touch but not mushy.
- Sugar: A touch of sweetness helps balance the tartness of the apricots and yogurt. Adjust to your preference based on the sweetness of your fruit.
- Lime Juice: A splash of fresh lime juice brightens the apricot flavor and adds a subtle, refreshing tang. Lemon juice can also work as a substitute.
- Plain Yogurt: For that wonderfully creamy texture and rich mouthfeel, full-fat plain yogurt is highly recommended. Greek yogurt can also be used for an even thicker, protein-rich option, but adjust consistency as needed.
- Pear Vodka (or any clear liquor): This optional but highly recommended ingredient is the secret to a smoother, scoopable frozen yogurt. Alcohol doesn’t freeze solid, so a tablespoon or two helps prevent ice crystal formation, resulting in a perfectly creamy consistency that’s easy to enjoy right out of the freezer. Any clear vodka will work if pear vodka isn’t available.
This apricot frozen yogurt boasts a bold, natural apricot flavor, beautifully complemented by the subtle tang of the yogurt. With this delicious and easy recipe now a staple in my kitchen, I anticipate fewer trips to the neighborhood frozen yogurt shop this summer. I genuinely hope you give it a try and discover its magic for yourself!

Ingredients
-
2 cups (packed) peeled and chopped apricots -
1/3 cup + 2 Tablespoon sugar -
1 tablespoon lime juice -
2 cups plain yogurt, (I used full fat for best results) -
2 Tablespoons Pear Vodka, (or any clear vodka of your choice)
Instructions
-
In a high-speed blender or food processor, combine the peeled and chopped apricots, sugar, and fresh lime juice. Process until the mixture is completely smooth and no apricot chunks remain. This ensures a silky-smooth frozen yogurt.2 cups (packed) peeled and chopped apricots,
1/3 cup + 2 Tablespoon sugar,
1 tablespoon lime juice -
Pour the apricot puree into the plain yogurt. Stir gently but thoroughly until the puree is fully incorporated and the mixture is uniformly smooth and creamy.2 cups plain yogurt
-
Chill the yogurt mixture for at least several hours in the refrigerator, or preferably overnight. This crucial step ensures the mixture is very cold, which is vital for achieving the best consistency in your ice cream maker. A well-chilled base freezes faster and results in a smoother final product.
-
Just before churning, stir in the pear vodka (or your preferred clear vodka) into the chilled yogurt mixture. Transfer the entire mixture to your ice cream maker bowl and process according to the manufacturer’s directions. Churn until the frozen yogurt reaches a soft-serve consistency. It will be ready to enjoy immediately for a softer texture or can be transferred to an airtight container and frozen for a firmer scoop.2 Tablespoons Pear Vodka

Tips for Perfect Apricot Frozen Yogurt
- Choose Ripe Apricots: The flavor of your frozen yogurt heavily depends on the quality of your apricots. Ensure they are fully ripe, sweet, and fragrant for the best results.
- Full-Fat Yogurt is Key: While you can use low-fat yogurt, full-fat yogurt provides a richer, creamier texture and helps prevent an icy consistency.
- Thorough Chilling is Essential: Do not skip the chilling step! A very cold mixture churns more efficiently in the ice cream maker, leading to a smoother and more delicious froyo.
- Don’t Skip the Alcohol: Even a small amount of clear alcohol like vodka helps lower the freezing point of the mixture, preventing large ice crystals and resulting in a softer, more scoopable frozen yogurt.
- Adjust Sweetness: Taste your apricot puree before mixing it with the yogurt. If your apricots are very tart, you might want to add a little more sugar.
Serving Suggestions and Variations
This apricot frozen yogurt is delightful on its own, but you can elevate it with various toppings and twists:
- Fresh Fruit: Garnish with extra fresh apricot slices, berries, or a medley of summer fruits.
- Crunchy Toppings: Add a sprinkle of chopped pistachios, almonds, granola, or toasted coconut flakes for texture.
- Sweet Drizzles: A drizzle of honey, maple syrup, or a light apricot jam can enhance the flavor profile.
- Herbal Touch: A few fresh mint leaves can add a refreshing aroma and taste.
- Spice It Up: A tiny pinch of cardamom or ginger in the apricot puree can add a warm, exotic note.
