chicken pot pie ingredients
  • Biscuits: We recommend using canned Pillsbury Grand Biscuits for their convenience and fluffy texture, which crisps up beautifully on top of the casserole, absorbing the savory flavors below.
  • Frozen Mixed Vegetables: A blend of peas, carrots, corn, and green beans provides a colorful and nutritious element without the need for chopping. Frozen vegetables are a fantastic time-saver and maintain their flavor and texture well in a casserole.
  • Cooked Shredded Chicken: This is where the “easy” factor truly shines! Using leftover chicken, rotisserie chicken, or even pre-cooked packaged chicken breast dramatically cuts down on preparation time. Shred it for easy mixing and a uniform texture.
  • Cream of Chicken Soup: This forms the rich, creamy base of our casserole. We often opt for the low sodium version to better control the overall saltiness of the dish, allowing the other seasonings to shine.
  • Milk: Adds to the creaminess and helps achieve the perfect consistency for the pot pie filling. Any milk will work, from whole to skim.
  • Better Than Bouillon Chicken Base: This concentrated paste delivers an incredible depth of chicken flavor that elevates the entire dish beyond what canned soup alone can offer. We prefer the reduced sodium version. If you don’t have this, chicken broth or bouillon cubes can be substituted.
  • Fresh Parsley: A sprinkle of fresh parsley adds a touch of color and a bright, herbaceous note that complements the rich flavors of the casserole.
  • Lemon Juice: A small but mighty ingredient, lemon juice adds a subtle tang that brightens the flavors and prevents the dish from tasting too heavy.
  • Poultry Seasoning: A classic blend of herbs and spices specifically designed to enhance chicken dishes, giving your casserole that authentic pot pie aroma and taste.
  • Dried Thyme: Earthy and slightly minty, thyme is a traditional herb in pot pie and adds a warm, aromatic quality.
  • Dried Oregano: With its robust and slightly bitter notes, oregano contributes to the savory complexity of the casserole.
  • Butter: Melted butter is brushed over the biscuits before their final bake, helping them achieve that irresistible golden-brown crust and adding a touch of richness.
  • Salt & Pepper: Essential for seasoning to taste, balancing and enhancing all the other wonderful flavors in the casserole.

Step-by-Step Guide: Crafting Your Easy Chicken Pot Pie Casserole

Making this chicken pot pie casserole is incredibly straightforward, perfect for a no-fuss dinner. Follow these simple steps for a delicious and comforting meal:

  • Pre-Bake Biscuits. First, preheat your oven to 375ºF (190ºC). Arrange the canned biscuits on an ungreased baking sheet. You’ll want to bake them for about 10 minutes. This partial baking step is crucial; it ensures the biscuits begin to cook and firm up before being placed on the casserole, preventing them from becoming soggy and allowing them to get that perfect golden-brown finish during the final bake.
  • Prepare the Casserole Mixture. While the biscuits are partially baking, turn your attention to the filling. In a large 9×13 inch baking dish (no need to grease it), combine the frozen vegetables, shredded cooked chicken, cream of chicken soup, milk, Better Than Bouillon chicken base, fresh parsley, lemon juice, poultry seasoning, dried thyme, dried oregano, salt, and pepper. Stir all these ingredients thoroughly until they are well combined and the chicken and vegetables are evenly coated in the creamy sauce. This ensures every bite is packed with flavor.
  • Initial Casserole Bake. Place the baking dish with the chicken and vegetable mixture into the preheated oven. Bake for approximately 25 minutes. During this time, the vegetables will soften further, the flavors will meld together beautifully, and the sauce will start to thicken and become bubbly around the edges. Remember, do not add the biscuits yet!
  • Add Biscuits and Final Bake. Carefully remove the casserole dish from the oven. Now, artfully arrange the partially baked biscuits over the top of the hot, bubbling casserole mixture. Gently brush the tops of these biscuits with melted butter. This butter not only adds a rich flavor but also helps the biscuits achieve a beautiful, golden-brown crust. Return the casserole to the oven and bake for an additional 10-12 minutes, or until the biscuits are fully cooked through, golden brown, and the casserole filling is piping hot and bubbly.
  • Serve and Enjoy. Once done, remove the casserole from the oven. For an extra touch of freshness and presentation, sprinkle a little bit of fresh parsley over the top before serving. Let it cool for a few minutes to allow the sauce to set slightly, then scoop out generous portions and savor this warm, homemade comfort food.

Recipe Tips & Creative Variations for Your Casserole

  • Protein Alternatives & Enhancements: While chicken is classic, this casserole is wonderfully versatile. If you’re “not a fan of chicken” or simply want to try something different, feel free to use any cooked protein you prefer. Leftover Baked Ham, cooked turkey, shredded pork, or even ground beef or turkey (browned and drained) would work beautifully. For a vegetarian option, consider using cooked lentils, chickpeas, or a plant-based chicken substitute. Ensure your protein is cooked and shredded/diced before adding it to the mixture.
  • Short on Time? Make Ahead Options: This casserole is incredibly convenient for busy schedules. You can prepare the filling mixture (without the biscuits) entirely ahead of time. Simply mix all ingredients in the baking dish, cover it tightly, and store it in the refrigerator for up to 2 days. When you’re ready to bake, follow the recipe instructions, adding the partially baked biscuits midway through the cooking time. You might need to add an extra 5-10 minutes to the initial bake time if starting from cold.
  • The Magic of Rotisserie Chicken: As highlighted, using a rotisserie chicken is a fantastic shortcut that makes this recipe even easier. We almost always pick one up from the store, shred the meat, and freeze it in freezer-safe containers. This way, you have pre-cooked chicken ready to go for this casserole or any other recipe at a moment’s notice. Any leftover cooked chicken, from roasted to boiled, also works perfectly.
  • Mindful of Sodium? Easy Adjustments: If you’re concerned about sodium intake, you have options! We specifically use the reduced sodium versions of both cream of chicken soup and Better Than Bouillon. If these aren’t available or if you’re using regular versions, make sure to taste the mixture before adding the salt called for in the recipe. Often, with regular canned goods and bouillon, you might not need to add any additional salt at all.
  • Better Than Bouillon Alternatives: Better Than Bouillon is a secret weapon for boosting flavor, but if you don’t have a jar in your fridge (we highly recommend it!), you can easily substitute. Use an equivalent amount of chicken broth or stock (about 1-2 cups less milk to maintain consistency), chicken bouillon granules, or crushed bouillon cubes mixed with a bit of hot water. The goal is to add concentrated chicken flavor.
  • Vegetable Power-Ups: Feel free to customize your vegetable mix! Beyond the classic peas, carrots, corn, and green beans, consider adding diced potatoes (partially cooked first), chopped broccoli florets, sliced mushrooms, or even a handful of spinach for extra nutrients and texture. Freshly sautéed onions and celery can also add a wonderful aromatic base.
  • Cheesy Twist: For an extra layer of richness, sprinkle a cup of shredded cheddar cheese or a blend of your favorite cheeses into the chicken and vegetable mixture before baking. It will melt into the creamy sauce, adding a delicious, gooey texture.

Perfect Pairings: What to Serve with Chicken Pot Pie Casserole

This casserole is a hearty, fulfilling meal all on its own, packed with protein, vegetables, and a delicious topping. However, if you’re looking to round out the meal or add a fresh contrast, here are a few ideas that would pair wonderfully:

  • Simple Tossed Salad: A crisp, fresh green salad with a light vinaigrette provides a refreshing counterpoint to the rich and creamy casserole.
  • Roasted Asparagus: Tender-crisp roasted asparagus, seasoned simply with salt, pepper, and a drizzle of olive oil, adds a touch of elegant green and a healthy vegetable side.
  • Fruit Skewers: A vibrant assortment of seasonal fruits on skewers offers a light, sweet, and refreshing finish to the meal, providing a nice contrast in flavor and texture.
  • Steamed Green Beans or Broccoli: For a quick and easy side, simply steam some green beans or broccoli florets. They add a bright color and essential nutrients without overwhelming the main dish.

Storing & Reheating Leftover Chicken Pot Pie Casserole

If you’re lucky enough to have leftovers (it’s often too delicious to leave any!), store them properly to enjoy later. Transfer the cooled casserole to an airtight container or simply cover the baking dish tightly with plastic wrap or foil. It will keep well in the refrigerator for up to 3 days. While the biscuits on top might get a little softer and less crisp, the flavors will still be fantastic. To reheat, you can use the oven (for a crispier biscuit, about 350°F/175°C until heated through) or the microwave for individual portions, though the microwave will soften the biscuits further. This casserole also freezes well; freeze individual portions for easy future meals, reheating from frozen in the oven or thawed in the microwave.

Creative Topping Alternatives: Beyond Biscuits

Absolutely! While canned biscuits offer unparalleled convenience and a delightful texture, they aren’t available everywhere, and sometimes you just want to try something different. This casserole is incredibly adaptable when it comes to its topping. Here are some excellent alternatives:

  • Easy Drop Biscuits: If you prefer homemade but still want ease, whip up a batch of easy drop biscuits. You can spoon them directly onto the casserole for the final bake, similar to how you would with canned biscuits, ensuring they cook through and brown beautifully.
  • Puff Pastry: For a more elegant presentation, a sheet of puff pastry makes a fantastic topping. Simply lay it over the casserole, cut a few vents, and bake until golden and puffed. It creates a wonderfully flaky crust.
  • Traditional Pie Crust: For the classic chicken pot pie experience, use a store-bought or homemade pie crust. You can either cover the entire casserole with one large crust or cut it into individual squares or shapes.
  • Cornbread Topping: A savory cornbread topping adds a unique, slightly sweet, and crumbly texture. Prepare a batch of your favorite cornbread batter and spread it over the casserole before baking.
  • Mashed Potatoes: For a shepherd’s pie-inspired twist, top the creamy chicken mixture with a layer of fluffy mashed potatoes. This creates a comforting and satisfying golden crust.
  • Tater Tots: A fun, kid-friendly option! Arrange a layer of frozen tater tots over the filling and bake until golden and crispy.
