Ingredients 

  • 4 strips bacon (diced)
  • 4 whole large eggs
  • 1 Tablespoon olive oil
  • 1 cup finely diced potatoes, or frozen hash browns
  • 4 tortillas, warmed
  • Salt and freshly ground black pepper to taste

  • Shredded Cheddar Cheese

Instructions 

  • Start by cooking your bacon so it is nice and crispy. Cut into small pieces and cook over medium heat for 10-12 minutes, until browned and crispy, stirring often. Drain away the grease (reserving a tablespoon if desired for eggs/potatoes) and set it aside until you are ready to use it.
