Just today, I found myself sitting amidst the vibrant energy of a local park, thoroughly entertained as my son and his friend attempted to master the intricacies of tennis. My son has been absolutely enamored with the sport this summer, constantly asking to visit the courts near our home. After a fun sleepover last night, bringing them here this morning felt like the perfect plan. Ingredients 

  • 1 pound Rotini Pasta
  • 1 Tablespoon olive oil
  • 1 cup onions, thinly sliced
  • 2 15 oz cans chickpeas, rinsed and drained
  • 2 cloves garlic, minced
  • 2 Tablespoons ground cumin
  • 1/3 cup Mango Chutney
  • 1/4 cup olive oil (for vinaigrette)
  • 2 Tablespoons fresh lime juice
  • Salt and freshly ground black pepper to taste
  • 1 cup fresh parsley, finely chopped

Instructions 

  • Cook rotini pasta according to package directions until al dente. Drain thoroughly and set aside to cool slightly. If serving cold, rinse with cold water to stop cooking.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the thinly sliced onions and sauté, stirring occasionally, until they become soft and lightly caramelized, about 5-7 minutes. Then, add the rinsed chickpeas, minced garlic, and ground cumin. Stir well to combine and cook for another 3-5 minutes, allowing the flavors to meld and the spices to become fragrant.
  • Meanwhile, prepare the vibrant vinaigrette. In a medium bowl, whisk together the mango chutney, 1/4 cup olive oil, and fresh lime juice until thoroughly combined. Season the vinaigrette with salt and freshly ground black pepper to taste, adjusting to achieve your desired balance of sweet and tangy.
  • In a large mixing bowl, combine the cooked pasta, the warm chickpea and onion mixture from the skillet, and the prepared chutney-lime vinaigrette.
