Our journey with this particular risotto began six years ago, at my sister-in-law’s rehearsal dinner. From the first bite, I was captivated. It was exceptionally flavorful, incredibly creamy, and just profoundly satisfying. I knew immediately that I had to try and recreate it in my own kitchen. While no homemade dish ever tastes *exactly* like the one from a professional chef, my version comes remarkably close, capturing that same rich, creamy, and utterly delicious essence. - 8 oz Shiitake Mushrooms, sliced

- 1 lb Italian Sausage, casings removed
- 1 Tbls unsalted butter
- Salt and freshly ground black pepper to taste
- 2 cups Arborio Rice
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan Cheese, plus more for serving
Instructions:
- Prepare the Stock: In a medium saucepan, combine the chicken and beef stock. Warm over low heat and keep it at a gentle simmer throughout the cooking process. This ensures the rice continues cooking evenly without cooling down.
- Sauté Mushrooms: In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced Shiitake mushrooms and thyme. Sauté until the mushrooms are tender and lightly browned, about 5-7 minutes. Season lightly with salt and pepper. Remove from the skillet and set aside.

- Gradually Add Stock: Begin adding the warm stock to the rice, one ladleful (about 1 cup) at a time. Stir frequently, allowing each addition of stock to be almost completely absorbed by the rice before adding the next ladleful. This process is key to developing the creamy texture of risotto. Continue this process, adding stock and stirring, for about 20-25 minutes, or until the rice is al dente (cooked through but still firm to the bite) and the risotto is wonderfully creamy. You may not need all of the stock, or you might need a little more depending on the rice.
- Finish the Risotto: Once the rice is cooked to your desired consistency, remove the skillet from the heat. Stir in the sautéed mushrooms and browned Italian sausage. Add the 1 tablespoon of butter and the 1/2 cup of grated Parmesan cheese. Stir gently until the butter is melted and the cheese is fully incorporated, making the risotto even creamier.
- Serve: Taste and adjust seasoning with salt and pepper as needed. Serve immediately in warm bowls, topped with additional grated Parmesan cheese and a sprinkle of fresh parsley if desired.
