- 3 pound boneless pork loin
- 12 oz Coke
- ¼ cup brown sugar

- Pour coke over pork. Cover and cook on low for 7-9 hours until tender and you can shred.
- After the pork is tender, remove from slow cooker and use 2 forks to shred. Pour out the liquid in the slow cooker. Add pork back to slow cooker.
- In a blender or food processor combine all of the ingredients for the sauce (Coke, brown sugar, chili powder, ground cumin, diced green chilies, red enchilada sauce). Blend until smooth.
