  • 1 1/2 pound tomatillos
  • 2 Anaheim peppers, or poblano peppers
  • 1 jalapeno pepper
  • 2 Tablespoons olive oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 handful cilantro
  • 2 cups chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt

Instructions 

  • Prep the vegetables by remove the husk from the tomatillos and washing well. Cut into quarters. Remove the stem and seeds from the poblano and jalapeno peppers.
