Delicious Asian Peanut Noodles on a plate

This recipe holds a special place in my heart because it reminds me of a cherished anniversary tradition. My husband and I celebrated our 11th anniversary recently, and instead of the usual babysitter scramble, we decided to spend the day together. It brought back memories of how we met and all the adventures we’ve had since then.

Our story is a bit unique – our parents actually live across the street from each other now! I often get asked how we met, and this seems like the perfect time to share. But before you jump to conclusions, no, they didn’t always live across the street. That’s only been the case for the past six years or so. Before that, they just happened to live in the same town. It’s a fun coincidence that adds a unique layer to our relationship!

The real beginning of our story starts in high school, during competitive summer marching band. He was a drummer, and I played the trombone. The summer between my freshman and sophomore year, our paths crossed. We bonded over card games on long bus trips and became fast friends. Once school started, he mustered up the courage to ask me to the movies. This momentous occasion happened to fall on Labor Day weekend. Being a cautious 15-year-old, I wasn’t “allowed” to date until I turned 16.

I may have stretched the truth a little, telling my parents we were going to the movies as a group. Of course, they didn’t quite believe me. After some serious persuasion, they finally relented and allowed me to go on a “date” with this charming 17-year-old who actually owned a car! But there was a catch, as there often is with parents. On Friday night, we had to endure a family dinner at a pizza place followed by the dreaded high school football game. To make matters even more embarrassing, my aunt and uncle, who also lived in town, somehow ended up there as well. Talk about a first date! He must have passed the parental test because the following night, we were granted permission to go to a movie and get ice cream, just the two of us.

We dated for a while, as high school sweethearts do, and then went our separate ways. He went off to college (thankfully only 30 minutes away), and we both dated other people. But through it all, we remained really good friends. Then, the summer between my freshman and sophomore year in college, we decided to take a trip to Florida to visit his sister. She worked at Disney, so it was a super fun trip filled with theme park magic. Shortly before school started, the spark reignited, and we started dating again.

This time, however, our colleges were two hours apart, forcing us to navigate the challenges of a long-distance relationship. After he graduated, he had to choose between moving to Fort Collins or Rochester, MN. Rochester was strategically located just one hour away from my school, and I still had a year and a half left to complete my studies. So, Rochester it was. He selflessly prioritized our relationship, and I’ll forever be grateful for that.

The proposal happened on my birthday, January 1, 2001. I still had a semester of school to finish, but we were both eager to get married and start our life together. August 31, 2001, was the soonest we could find a venue. It fell on the Friday of Labor Day weekend, which felt incredibly fitting, considering our first date was also on a Friday of Labor Day weekend. Fast forward 11 years, and here we are in Fort Collins, with a wonderful 7-year-old son. Looking back, I wouldn’t change a single thing! It’s been an amazing 11 years, and I’m excited for the many more adventures that lie ahead!
