Ingredients 

  • 3 cups olives, whatever kind you like
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 whole lemon, zest and juice
  • 2 sprigs rosemary
  • 1/2 teaspoon crushed red pepper flakes
  • Salt and Pepper to taste

Instructions 

  • Preheat oven to 400 degrees Fahrenheit (200°C).
  • In a small bowl, thoroughly mix together the olive oil, minced garlic, fresh lemon zest, tangy lemon juice, fragrant crushed red pepper flakes, and season generously with salt and pepper to taste. 
  • Tear the fresh sprigs of rosemary into manageable 1-2 inch pieces. Add these aromatic pieces to the olive oil mixture and stir well to fully combine all the flavors.
  • Pour the prepared flavorful mixture over your chosen olives in a baking dish or on a small sheet pan. Toss gently to ensure every olive is evenly coated with the herb and lemon-infused oil.
  • Bake in the preheated oven for 20-25 minutes, or until the olives are slightly softened, warmed through, and their aromas are beautifully released.
  • Serve these delightful Rosemary Roasted Olives immediately, preferably warm, for the best flavor and texture.
