Ingredients 

  • 3 8 inch flour tortillas
  • 1 pound lean ground beef
  • 1/2 onion, finely chopped
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 15 oz can black beans, drained and rinsed
  • 1 10 oz can diced tomatoes with green chiles
  • 1/2 cup sour cream
  • 2 cups shredded Mexican cheese blend

Instructions 

  • Preheat oven to 350º F (175°C).
  • In a large skillet, brown ground beef and onion together, breaking up for 5-6 minutes, until the beef is cooked and the onions are soft. Drain away any grease.
