The beauty of these Pilgrim Hat Cookies lies in their minimalist ingredient list. You only need four readily available items to bring these festive treats to life. Each ingredient plays a crucial role in both the structure and flavor, combining to create a perfectly balanced and irresistible holiday cookie.
- Fudge Stripe Cookies: These cookies form the sturdy base and the “brim” of your Pilgrim hat. Their flat shape and pre-existing chocolate drizzle make them ideal for this recipe, adding both flavor and visual appeal effortlessly.
- Mini Reese’s Peanut Butter Cups: These delightful candies are the perfect choice for the “hat” portion. Their distinctive shape and beloved peanut butter and chocolate flavor are a guaranteed hit. Remember to unwrap them before you begin!
- Yellow/Orange Frosting: This vibrant frosting acts as the adhesive to hold the peanut butter cup in place, while also creating a decorative “band” around the hat. You can choose store-bought frosting for convenience or easily color your own homemade vanilla frosting.
- Reese’s Pieces (or Candy Corn): These small candies serve as the iconic “buckle” on your Pilgrim hat. The contrasting color against the frosting truly makes the design pop. Candy corn is another fantastic alternative, especially for a classic fall look.

How To Make Pilgrim Hat Cookies: A Step-by-Step Guide
Assembling these Pilgrim Hat Cookies is a straightforward and enjoyable process. Follow these simple steps to create your batch of charming holiday treats. Precision isn’t paramount here; the goal is to have fun and create something delightful!
- Prepare Your Workstation: Begin by arranging your Fudge Stripe Cookies. Place them chocolate-side facing up on a clean cutting board, baking sheet, or serving platter. Ensuring the chocolate side is up provides a nice, dark base for your hat and makes the frosting stand out. Give yourself enough space between each cookie to work comfortably.
- Apply the Frosting: Take your yellow or orange frosting and pipe a neat circle in the center of each cookie. The size of this circle should be approximately the same diameter as the base of a mini Reese’s Peanut Butter Cup. This frosting circle will serve as both the adhesive and the decorative band of your Pilgrim hat.
- Add the Peanut Butter Cup: Gently place one unwrapped Mini Reese’s Peanut Butter Cup upside down onto the center of the frosting circle. Press down lightly but firmly. As you press, the frosting will naturally spread around the base of the peanut butter cup, forming a lovely, visible rim that mimics the band of a hat.
- Attach the Buckle: Now for the finishing touch! Select a Reese’s Pieces candy in a contrasting color (e.g., orange if you used yellow frosting) or a small piece of candy corn. Carefully place this candy on the edge of the peanut butter cup, where the frosting rim meets the cup, to represent the buckle. If the frosting doesn’t come up quite high enough to secure the candy, simply dab a tiny bit more frosting onto the back of the candy piece before placing it. This ensures it stays firmly in place.

Recipe Tips & Creative Variations for Your Pilgrim Hats
While the basic recipe for Pilgrim Hat Cookies is incredibly simple, there are many ways to customize and enhance them to suit your taste, available ingredients, or decorative preferences. Here are some tips and creative variations to inspire your holiday baking (or rather, no-baking!).
- Candy Corn for the Buckle: If you prefer the classic look of candy corn, it makes an excellent substitute for Reese’s Pieces. For a truly authentic buckle shape, you can gently cut off just the orange tip of a candy corn piece and adhere it in place. The triangular shape adds a charming detail.
- Frosting Options: You have flexibility with the frosting. Store-bought decorating frosting, readily available in tubes or tubs, offers ultimate convenience. However, if you prefer a homemade touch, you can easily use about 1/2 cup of my Vanilla Frosting recipe and color it yellow or orange with a few drops of food coloring. This allows for a fresher taste and potentially a smoother texture.
- Alternative Cookie Bases: While Fudge Stripe Cookies are perfectly suited for their flat chocolate design, don’t limit yourself! Any flat chocolate cookie can work as a suitable base. You could even experiment with Oreos. If using Oreos, consider using a slightly smaller peanut butter cup or adjusting the frosting circle to accommodate the cookie’s size, ensuring a harmonious hat proportion.
- DIY Piping Bag: No fancy cake decorating supplies? No problem! Achieving that perfect frosting circle is easy with a DIY piping bag. Simply spoon your frosting into a sturdy ziplock bag, push it into one corner, and snip off a tiny bit of the corner with scissors. This creates an instant piping tool that gives you control to pipe a clean, consistent circle around the cookie’s center.
- Setting Time is Key: For best results and to ensure your Pilgrim hats hold their shape, allow the cookies to set for approximately one hour before serving. This gives the frosting ample time to firm up and securely adhere the peanut butter cup and buckle to the cookie base, preventing any accidental collapses or smudges when handled.
- Get Creative with Colors: While yellow/orange frosting is traditional for Thanksgiving, feel free to experiment with other fall colors like deep red, brown, or even a mixed palette for a unique touch.
- Add Sprinkles: Before the frosting sets, a light dusting of festive sprinkles around the base of the peanut butter cup can add extra sparkle and charm.
Serving Suggestions for Your Pilgrim Hat Cookies
These delightful Pilgrim Hat Cookies are perfect on their own, but here are a few ideas to make them even more special. Arrange them artfully on a large platter or tiered stand for an impressive display. They pair wonderfully with a cup of coffee, hot apple cider, or a glass of milk. For a dessert bar, place them alongside other festive treats like pumpkin pie or apple crisp. Their individual serving size makes them easy for guests of all ages to enjoy!

Storage & Make-Ahead Advice
One of the many benefits of these no-bake Pilgrim Hat Cookies is their excellent shelf life and make-ahead potential. Once the cookies have had about an hour to set, ensuring the frosting is firm, you can transfer them to an airtight container. Stored at room temperature, they will remain fresh and delicious for approximately one week, making them ideal for preparing in advance of your holiday celebrations.
Freezing: Yes, you can absolutely freeze these cookies! This makes them a fantastic option for early preparation during the busy holiday season. Simply arrange the set cookies in a single layer in an airtight freezer-safe container, separating layers with parchment paper if stacking. They will last for about 2 months in the freezer. When you’re ready to serve, just bring them out to thaw at room temperature for an hour or two, and they’ll be as good as freshly made.
