  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 1 package taco seasoning
  • 4 cups enchilada sauce
  • 15 oz corn or black beans, drained
  • 16 corn tortillas
  • 3 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 350º F (175°C).
  2. In a large skillet, brown the ground beef and onions together until the beef is cooked and the onions are soft. Drain any excess grease. Then, add taco seasoning and any water called for by the seasoning packet, and simmer until the liquid is absorbed.
  3. Spread about 1/2 cup of enchilada sauce into the bottom of a 13×9 inch or 2 qt casserole dish. Then arrange about 4 tortillas along the bottom, trimming to fit if necessary.
