Blondies have always held a special place in the world of desserts for their remarkable simplicity and comforting appeal. Unlike their fudgier brownie cousins, blondies offer a chewy, caramel-like texture that’s simply divine. What makes this recipe even more appealing is its incredible ease – you won’t need a stand mixer or any fancy equipment. Just a single bowl and a sturdy spatula are all it takes to whip up a batch of these golden-brown beauties, making them perfect for spontaneous baking or a quick treat. The rich combination of textures and the triple threat of cinnamon in the batter, the chips, and the glaze truly make these blondies an unforgettable experience.

Why These Cinnamon Blondies Are an Absolute Must-Bake

Beyond their simple preparation, these Cinnamon Blondies offer a multitude of reasons to become a staple in your baking repertoire. They hit all the right notes for a perfect homemade treat, combining convenience with incredible flavor.

  • Effortlessly Easy & No Mixer Required. If you’re anything like me, the thought of hauling out a heavy stand mixer for a dessert can sometimes be a deterrent. That’s precisely why these blondies are a cherished favorite! This recipe is designed for maximum ease, requiring nothing more than a mixing bowl and a sturdy spatula. The process is straightforward: melt the butter, stir in the sugars, egg, and vanilla, then fold in the dry ingredients and cinnamon chips. Pour the batter into your prepared pan, pop it in the oven, and let the magic happen. It’s a truly fuss-free dessert that delivers impressive results every time, proving that delicious baking doesn’t have to be complicated.
  • A Symphony of Cinnamon Goodness. For those who adore cinnamon, these blondies are a dream come true. We don’t just stop at a hint of spice; we embrace it fully! The recipe incorporates ground cinnamon directly into the blondie batter, infusing every bite with that characteristic warm, comforting flavor. Then, to elevate the experience, we fold in generous amounts of actual cinnamon chips, providing delightful pockets of concentrated cinnamon goodness. And as if that weren’t enough, an optional (but highly recommended!) cinnamon glaze is drizzled on top, adding a final layer of sweet, spiced perfection. It’s a truly immersive cinnamon experience from start to finish.
  • Perfect for Any Gathering or Crowd. This recipe, as written, is ideal for an 8-inch baking pan, yielding a perfectly sized batch for a family treat or a small get-together. However, if you find yourself needing to feed a larger crowd – whether it’s a holiday party, a school event, or a potluck – these blondies are incredibly versatile. You can easily double the recipe to fit a standard 13×9-inch baking pan without any adjustments to the baking method, just a slight increase in baking time. This adaptability makes them a fantastic choice for any occasion, ensuring everyone gets a taste of these delicious, spiced bars.

Gather Your Ingredients: Essential Components for Perfect Blondies

Before you begin, make sure you have all your ingredients measured and ready. For the full, detailed recipe card with precise measurements and instructions, please scroll to the bottom of this post.

  • Unsalted Butter – Using unsalted butter allows you to control the overall salt content in your baked goods, ensuring the perfect flavor balance. We’ll be melting this for a wonderfully chewy texture.
  • Light Brown Sugar – This isn’t just for sweetness; light brown sugar contributes to the moist, chewy texture and adds a subtle caramel note that complements the cinnamon beautifully.
  • Granulated Sugar – Paired with brown sugar, granulated sugar ensures the ideal balance of sweetness and helps create that signature blondie crisp edge.
  • Large Egg – The egg acts as a binder, providing structure and richness to the blondies, while also contributing to their soft, chewy crumb.
  • Pure Vanilla Extract – A classic flavor enhancer, vanilla extract beautifully highlights and deepens the warm spice of the cinnamon. Don’t skip it!
  • All-Purpose Flour – The structural backbone of our blondies, providing body without making them tough.
  • Baking Powder – This leavening agent gives the blondies a slight lift, resulting in a tender and soft interior.
  • Ground Cinnamon – The star of the show! We use a generous amount to infuse every bite with its signature warmth and spice.
  • Fine Sea Salt – A touch of salt is crucial in baking. It balances the sweetness, enhances all the flavors, and prevents the blondies from tasting flat.
  • Cinnamon Chips – These are the secret weapon for an explosion of cinnamon flavor and delightful texture. Hershey’s brand is widely available in many grocery stores, often found near chocolate chips.
  • Powdered Sugar – The base for our optional, but highly recommended, smooth cinnamon glaze.
  • Milk – Used to thin the powdered sugar and cinnamon into a perfect drizzling consistency for the glaze. Any type of milk (dairy or non-dairy) will work.

Baking Perfection: Step-by-Step Guide to Making Cinnamon Blondies

Creating these delightful cinnamon blondies is a straightforward process that yields incredibly satisfying results. Follow these simple steps for a batch of perfectly chewy, flavorful bars:

  • Prepare the Wet Ingredients. Begin by melting your unsalted butter in a medium-sized mixing bowl. You can do this in the microwave in short bursts or over a double boiler. Once melted, add both the light brown sugar and granulated sugar to the warm butter. Stir vigorously with your spatula until the mixture is very well combined and smooth. This step is important for dissolving the sugars and creating a uniform base. Next, crack in the large egg and pour in the vanilla extract. Continue mixing until the egg and vanilla are fully incorporated into the sugar-butter mixture, ensuring a smooth and cohesive wet batter.
  • Incorporate the Dry Ingredients. To the wet mixture, add the all-purpose flour, baking powder, ground cinnamon, and salt. Gently mix these dry ingredients into the wet until they are *just barely* combined. It’s perfectly fine if you still see a few small streaks of flour remaining at this stage – overmixing can lead to tough blondies. Finally, fold in the star of the show, the cinnamon chips, until they are evenly distributed throughout the batter. Take care not to overmix here either, as gentle handling will result in a more tender blondie.
  • Bake to Golden Perfection. Pour the prepared blondie batter evenly into your greased or parchment-lined 8-inch baking pan. Spread it out with your spatula to ensure an even thickness. Transfer the pan to your preheated oven and bake for approximately 25 minutes. The key is to look for a golden-brown edge and a center that is mostly set but still looks slightly soft. A toothpick inserted into the center should come out with moist crumbs, but not wet batter. Remember, blondies continue to cook slightly as they cool, so it’s better to slightly underbake than overbake for that coveted chewy texture. Remove from the oven and allow them to cool completely in the pan before proceeding.
  • Drizzle with Cinnamon Glaze (Optional). Once your cinnamon blondies have completely cooled (this is crucial for the glaze to set properly and not melt), prepare the delightful cinnamon glaze. In a small bowl, whisk together the powdered sugar, a touch more cinnamon, and 1 tablespoon of milk. Gradually add more milk, a tiny bit at a time, until you reach a smooth, pourable, and drizzling consistency. The exact amount of milk needed can vary slightly. Once the glaze is perfect, generously drizzle it over the cooled blondies. Allow the glaze a few minutes to set before slicing the bars into squares and serving.

Expert Tips & Tricks for the Best Cinnamon Blondies

Achieving the perfect blondie texture and flavor is easy with a few insider tips. Keep these in mind as you bake to ensure your Cinnamon Blondies turn out absolutely phenomenal every single time.

  • Sourcing Cinnamon Chips. Cinnamon chips are truly what makes these blondies sing with flavor! Hershey’s is a widely recognized brand that produces them. While they can sometimes be a seasonal item or a little challenging to locate, I’ve had consistent luck finding them at larger grocery stores like Walmart or stores under the Albertson’s brand. If you’re having trouble, check the baking aisle near the chocolate chips or inquire with store staff. In a pinch, you can sometimes find them online, or consider finely chopping white chocolate and mixing it with extra ground cinnamon, though the texture won’t be quite the same.
  • Avoid Overmixing the Batter. This is a golden rule for many baked goods, and especially for blondies! Once you’ve added the flour and other dry ingredients, mix only until they are *just* combined. It’s perfectly okay if you still see a few small white streaks of flour in the batter before you fold in the cinnamon chips. Overmixing develops the gluten in the flour too much, which can result in tough, dense, or cake-like blondies instead of the soft, chewy texture we’re aiming for. Gentle folding will yield a much softer and more tender bar.
  • Don’t Overbake Your Blondies. Knowing when to pull blondies from the oven is key to their signature chewiness. You want to take them out when they are just barely set in the center, with edges that are golden brown. If they look slightly underdone, that’s often a good sign! They will continue to “bake” and set as they cool in the pan from the residual heat. An overbaked blondie will be dry and crumbly, losing that desirable moist, chewy center. A toothpick inserted into the center should come out with moist crumbs, not wet batter, but definitely not completely clean.
  • Pan Preparation Matters. For easy removal and clean slices, always prepare your baking pan properly. Lining your 8-inch pan with parchment paper, leaving an overhang on the sides, is highly recommended. This allows you to simply lift the entire cooled batch out of the pan before slicing. Alternatively, a good coating of non-stick spray will also work, but parchment paper offers a foolproof method.
  • Scaling for a Crowd. As mentioned, this recipe easily scales! To make a larger batch for a 13×9-inch baking dish, simply double all the ingredient quantities. The baking time will need to be adjusted slightly, usually around 30-35 minutes, but still keep an eye on them for those golden edges and a moist center as described above.

Storing Your Delicious Cinnamon Blondies

To keep your blondies fresh and delicious for as long as possible, proper storage is essential. Here’s how to store them for optimal enjoyment:

Store these cinnamon blondies in an airtight container at room temperature. They will remain wonderfully fresh, soft, and chewy for approximately 3 to 4 days. If your home is particularly warm, or if you prefer a slightly firmer blondie, you can also store them in the refrigerator, which may extend their freshness by an extra day or two. Just be sure to bring them back to room temperature before serving for the best texture.

If you’re planning to make a batch ahead of time or want to save some for later, these blondies freeze exceptionally well. For freezing, I highly recommend doing so *without* the cinnamon glaze. The texture of the glaze can change slightly upon thawing, becoming a bit watery or losing its smooth consistency. To freeze, simply wrap the cooled, unglazed blondie bars tightly in plastic wrap, then place them in an airtight freezer-safe bag or container. They can be frozen for up to 2-3 months. When you’re ready to enjoy them, thaw the blondies at room temperature, then prepare and drizzle with a fresh batch of the cinnamon glaze just before serving. This ensures the glaze has the perfect texture and freshness.
