Ingredients 

Cake

  • 3/4 cup butter, softened
  • 1 1/2 cup granulated sugar
  • 3 whole eggs
  • 2 teaspoon vanilla extract
  • 2 1/2 cup all-purpose flour
  • 2 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cup milk

Cream Layer

  • 1 (3.4 oz) box vanilla instant pudding mix
  • 2 1/2 cups cold milk
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Chocolate Layer

  • 3/4 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Whipped Cream

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions 

To Make Cake Layer

  • Preheat oven to 350 degrees F (175 C). Spray or line a 9×13 inch pan with parchment paper. Set aside.
  • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  • In an electric mixer, cream together softened butter and granulated sugar until light and fluffy (about 3-5 minutes). Beat in eggs one at a time, then add vanilla extract, mixing until smooth.
  • Alternate mixing in the flour mixture and milk, beginning and ending with the flour mixture, until just well combined and smooth. Be careful not to overmix. Pour the batter into the prepared pan. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and cool completely on a wire rack.

To Make Pudding Layer

  • In a large bowl, whisk together the vanilla instant pudding mix and cold milk for 2 minutes. Let stand for 5 minutes to thicken. Meanwhile, in a separate electric mixer bowl, beat 1 cup heavy cream until soft peaks form. Mix in 1/4 cup powdered sugar and 1 teaspoon vanilla extract. Continue beating until stiff peaks form.
  • Gently fold the prepared whipped cream into the pudding mixture until just combined. Place in the fridge for at least 30-60 minutes to set up completely and achieve a firmer, more pastry-cream-like texture.

To Make Chocolate Layer (Ganache)

  • In a small saucepan, heat 3/4 cup heavy cream over medium heat until it just begins to simmer around the edges; do not boil. Remove from heat. Place semi-sweet chocolate chips in a heatproof bowl. Pour the hot cream over the chocolate chips and let stand for 2 minutes to allow the chocolate to melt. Whisk gently until the chocolate is completely melted and the mixture is smooth and glossy. Let cool slightly to a pourable consistency.

To Make Whipped Cream Topping

  • In a clean electric mixer bowl, beat 1 cup heavy cream until soft peaks form. Mix in 1/4 cup powdered sugar and 1 teaspoon vanilla extract. Continue beating until stiff peaks form.

To Assemble Parfaits

  • Once the cake is completely cooled, cut it into small cubes. To assemble the 12 parfaits: Place a generous layer of cake cubes (about 2-3 tablespoons) in the bottom of each mason jar or dessert cup. Spoon a couple of tablespoons of the pudding mixture over the cake. Drizzle about a teaspoon of the cooled chocolate ganache over the pudding. Repeat these layers: add another layer of cake, then pudding, then a final drizzle of chocolate ganache. Top each parfait generously with the whipped cream topping and, if desired, a very small drizzle of extra chocolate or a few chocolate shavings. Refrigerate the assembled parfaits for at least 1 hour (preferably longer) before serving to allow flavors to meld and layers to set.
