Ingredients 

  • cocoa powder for dusting
  • 1/4 cup butter
  • 1 ounce unsweetened chocolate, chopped
  • 3 Tablespoons sugar, erythritol sweetener to make it keto approved
  • 1 large egg
  • 1 large egg yolk
  • 1/4 teaspoon vanilla extract
  • 3 Tablespoons almond flour
  • 1/8 teaspoon salt

Instructions 

  • Preheat oven to 375 degrees F (190 C).
  • Generously grease or butter two 4-oz ramekins. Dust the greased ramekins with cocoa powder, tapping out any excess. This helps prevent sticking and adds a beautiful finish.
  • In a small saucepan, combine the butter, chopped unsweetened chocolate, and sugar (or erythritol sweetener for keto). Melt these ingredients together over very low heat, stirring continuously until smooth and fully combined. Be careful not to scorch the chocolate.
  • Remove the saucepan from the heat. Immediately whisk in the large egg, egg yolk, and vanilla extract until the mixture is completely smooth and well-incorporated.
  • Gently fold in the almond flour and salt until just combined. Be careful not to overmix the batter.
  • Divide the batter evenly between the two prepared ramekins. Place them on a baking sheet. Bake for 13-15 minutes, or until the edges of the cakes are set and firm, but the center still jiggles slightly when gently shaken. This ensures the perfect molten center.
  • Remove the ramekins from the oven and let them cool on a wire rack for exactly 5 minutes. This cooling period is crucial for the cakes to set slightly and be easier to invert.
  • Carefully invert each ramekin onto a small serving plate. Serve immediately with your favorite toppings, such as a scoop of vanilla ice cream, a dollop of whipped cream, fresh berries, or an extra dusting of cocoa powder or powdered sugar. Enjoy your warm, gooey, molten chocolate lava cake!
