As the seasons shift and routines kick back into gear, especially with the return to school, finding simple and delicious dinner solutions becomes paramount. It often feels like summer flew by in a blur of activity, leaving us craving structure and predictability – not just in our daily lives, but at the dinner table too. Gone are the leisurely evenings; in their place, a constant quest for meals that are both comforting and quick to prepare.

In our increasingly busy lives, quick and easy weeknight dinners are not just a luxury; they are an absolute necessity. Relying on takeout or constantly ordering pizza can quickly become expensive and less healthy. That’s why having a repertoire of go-to recipes, like this delightful creamy pesto pasta, is invaluable. This dish is not only incredibly simple but also deeply satisfying, making it a perfect addition to your family’s meal plan. If you’re looking for other effortless options, a One Pan Cheesy Sausage Pasta is another fantastic choice, minimizing cleanup for those truly hectic evenings.

What makes this pesto pasta recipe truly shine is its remarkable simplicity and flexibility. It cleverly utilizes a jar of store-bought pesto and pre-cooked meatballs, transforming them into a gourmet-tasting dish with minimal effort. This means that even if you don’t consider yourself a seasoned chef, you can confidently prepare a meal that will leave your family feeling full, happy, and impressed. I originally developed this recipe (or rather, “assembled” it) last spring for my cooking club. The rave reviews were instant, yet I initially downplayed it, explaining it was simply a matter of tossing a few ingredients together – a spontaneous creation born from whatever I had on hand in the fridge!

However, my cooking club members, eager for precise instructions, weren’t thrilled with my “eyeball it” method. So, I decided to recreate it for my own family, carefully measuring each component, and now I have a fully tested, real recipe to share with you. This structured approach ensures that you can achieve the same delicious results every time, proving that convenience doesn’t have to sacrifice flavor. It’s a testament to how simple ingredients can come together to create something truly special, making it an ideal choice for busy households seeking flavorful and fuss-free dinner ideas.

As a personal confession, I am absolutely a sucker for all things pesto. If I spot pesto on a restaurant menu, it’s almost guaranteed to be my order. Dishes like Italian Turkey Cutlets are among my absolute favorites to prepare and enjoy. My husband, on the other hand, isn’t quite as enthusiastic about the intense, vibrant flavor of traditional pesto. This difference in preference led to a brilliant adaptation: transforming it into a creamy pesto sauce. By adding just a touch of cream – you can use heavy cream, half-and-half, or even milk – I was able to thin out the pesto and temper its intensity, making it far more appealing to a broader palate, including his. The added bonus? Plenty of cheese, which further enhances the creamy texture and irresistible savory notes, ensuring this dish is a hit with everyone, even those who might typically shy away from pesto.

One of the beauties of this recipe is its versatility when it comes to meatballs. You can use any type of meatballs you prefer or have readily available. Whether you opt for fresh meatballs from your butcher, convenient frozen meatballs, or even those found in the refrigerated section of your grocery store, they all work wonderfully in this dish. I’ve personally tried both packaged and frozen varieties, and both yield excellent results. The primary difference lies in the cooking time, with frozen meatballs requiring a few extra minutes to thaw and heat through properly. The key is to ensure they are fully cooked and browned, developing a delicious crust that adds texture and depth of flavor to the pasta. Once your meatballs are perfectly cooked, the rest is a simple assembly: incorporate the pesto, cream, and al dente pasta, then top with a generous sprinkle of cheese. A quick cover and a moment over gentle heat allow the cheese to melt into a gooey, irresistible layer, binding all the delicious components together.

This dish truly embodies the concept of a super easy dinner that you can whip up any night of the week, regardless of how busy your schedule might be. To complete your meal, consider serving it alongside a crisp green salad, perhaps with a tangy vinaigrette, or some warm, crusty garlic bread to soak up every last drop of that creamy pesto sauce. These simple accompaniments elevate the meal from casual to comforting and complete. Plus, one of the best advantages of this recipe is how well it holds up as leftovers. Portioning out any remaining creamy pesto pasta makes for a perfect, satisfying lunch to take to work or school the next day, saving you time and money. It’s a win-win, offering both immediate gratification and future convenience.

Ingredients

  • 1 12 ounce box Short Cut Pasta
  • 1 pound bag Precooked Meatballs
  • 1 tablespoon Olive Oil
  • 1 7 ounce jar Pesto
  • 1/2 cup Heavy Cream
  • 1 cup Mozzarella Cheese, shredded

Instructions

  • Bring a large pot of water to boil and cook pasta according to the package directions until al dente. Drain well.
  • While the pasta cooks, prepare the meatballs. If using frozen meatballs, cook them according to package directions or gently heat in a skillet until thawed completely through and warmed. For best results, you can lightly brown them for extra flavor. Once heated, you can cut larger meatballs in half if desired for easier serving.
  • In a large skillet, heat olive oil over medium-high heat. If your meatballs weren’t pre-browned, add them to the skillet and cook for 5-10 minutes, turning occasionally, until they are nicely browned and heated through. This step adds a wonderful caramelized exterior.
  • Remove the skillet from the heat. Stir in the jar of pesto and the heavy cream. Add the cooked pasta to the skillet with the meatballs and sauce. Toss everything gently until all ingredients are well combined and the pasta is evenly coated in the creamy pesto.
  • Evenly sprinkle the shredded Mozzarella cheese over the top of the pasta and meatballs in the skillet.
  • Cover the skillet and place it back on low heat, just until the cheese is beautifully melted and bubbly. This usually takes only a couple of minutes. Serve immediately and enjoy your delicious, effortless meal!
