Ingredients 

  • 1 pound baby red potatoes
  • 1 pound large shrimp, peeled and deveined
  • 1 pound Andouille sausage, sliced
  • 3-4 ears of corn, cut into small pieces
  • 4 Tbls butter, melted
  • 2 Tbls old bay seasoning
  • 1/4 cup fresh parsley, chopped

Instructions 

  • Preheat oven to 425 degrees F (220 degrees C).
  • Slice potatoes in half, and place them in a large saucepan. Cover with cold water, and bring to a boil. Cook for 8-10 minutes, or until they are almost completely done but still slightly firm. Drain well.
  • In a small bowl, mix together the melted butter and Old Bay seasoning until well combined.
  • On a large baking sheet, combine the sliced Andouille sausage, par-cooked potatoes, and corn pieces. Drizzle with the melted butter mixture and toss gently to ensure all ingredients are evenly coated.
  • Spread the ingredients in an even layer across the sheet pan. Place in the preheated oven and bake for 12-15 minutes, allowing the flavors to meld and the potatoes and sausage to further cook and brown.
  • Remove the sheet pan from the oven. Add the peeled and deveined shrimp to the pan, tossing gently with the other ingredients. Return to the oven and cook for an additional 8-10 minutes, or until the shrimp are pink and opaque and cooked through. Be careful not to overcook them.
