What You’ll Need to Make Them

Before you dive into baking, make sure you have these key ingredients on hand. For the full, detailed measurements, be sure to scroll to the bottom of the post for the PRINTABLE recipe card.

  • Cinnamon Roll Dough – This is your ultimate shortcut! While traditional monkey bread often uses biscuit dough, cinnamon roll dough adds an extra layer of sweetness and a hint of pre-made cinnamon flavor, making these muffins even more special and quick. You’ll be using the dough itself, not the icing that comes with it for the main part, but save it for a shortcut if you like!
  • Brown Sugar – Essential for that classic caramel-like sweetness and rich flavor that coats every piece of dough. Dark or light brown sugar both work, but light will give a slightly milder molasses flavor.
  • Ground Cinnamon – The heart of monkey bread flavor! This spice infuses the dough with warmth and aromatic notes. Don’t skimp on the cinnamon for maximum flavor.
  • Unsalted Butter – A key component for both the luscious glaze and the delightful cream cheese icing. Using unsalted butter allows you to control the overall saltiness of the dish.
  • Cream Cheese – Softened cream cheese forms the rich, tangy base for our optional but highly recommended icing, adding a wonderful counterpoint to the sweet muffins. Make sure it’s at room temperature for a smooth consistency.
  • Powdered Sugar (Confectioners’ Sugar) – Used to sweeten and thicken the cream cheese icing, giving it that smooth, drizzle-able texture.
  • Vanilla Extract – A touch of vanilla enhances all the sweet flavors in the cream cheese icing, adding depth and a lovely aroma.
  • Milk – Just a tablespoon or two of whole milk helps to achieve the perfect consistency for the cream cheese icing, making it pourable yet thick enough to cling to the muffins. Adjust as needed for your desired drizzle.

How To Make These Easy Monkey Bread Muffins

Crafting these delectable monkey bread muffins is surprisingly straightforward and quick. Follow these simple steps for a warm, gooey treat!

  1. Prepare Your Muffin Pan: Begin by thoroughly greasing a 12-cup muffin tin. You can use baking spray or softened butter. Ensure each cup is well-coated, as this is crucial for the muffins to release cleanly after baking, especially with the sticky glaze. Also, make sure to place a piece of foil or a large baking sheet on the bottom rack of your oven to catch any potential drippings from the glaze, preventing a mess. Set the prepared pan aside while you work on the dough.
  2. Prep the Dough & Cinnamon-Sugar Coating: Open the tubes of cinnamon roll dough and carefully separate each roll. Using a sharp knife or kitchen shears, cut each cinnamon roll into 6 smaller, bite-sized pieces. In a large gallon-sized plastic bag (or a mixing bowl), combine the brown sugar and ground cinnamon. Add the cut cinnamon roll pieces to the bag, seal it, and shake vigorously until all the dough pieces are evenly coated with the sweet cinnamon-sugar mixture. This step ensures every bite is bursting with flavor.
  3. Fill the Muffin Tin: Evenly distribute the coated cinnamon roll pieces into the prepared muffin cups. Aim for approximately 8 pieces of dough per muffin tin. Gently press the pieces down slightly to compact them, ensuring they bake together into a cohesive muffin shape.
  4. Prepare the Buttery Brown Sugar Glaze: In a small saucepan, combine the unsalted butter and light brown sugar. Place the saucepan over medium-low heat. Stir the mixture constantly as the butter melts and combines with the sugar. Continue stirring until the mixture comes to a gentle boil, which indicates the sugar has dissolved and the glaze is ready. This rich, buttery glaze is what gives monkey bread its signature gooeyness.
  5. Pour and Bake: Carefully pour the hot butter and brown sugar mixture evenly over the dough in each muffin cup. Ensure that each muffin gets a generous coating of the glaze. Transfer the muffin tin to your preheated oven and bake for 14-16 minutes, or until the glaze is visibly bubbly and the tops of the muffins are beautifully browned and slightly crisp. Keep an eye on them towards the end to prevent over-baking.
  6. Cool Before Removing: Once baked, remove the muffin tin from the oven. It’s essential to let the muffins cool in the tin for 5-8 minutes. This crucial cooling period allows the hot, sticky glaze to set up slightly, making it much easier to remove the muffins without them falling apart. After this initial cooling, carefully transfer the muffins to a wire rack to cool further.
  7. Whip Up the Cream Cheese Icing: While the muffins are cooling, prepare the creamy icing. In a small bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Using a whisk or an electric mixer, beat the ingredients together until the mixture is completely smooth and free of lumps. Add 1 tablespoon of milk at a time, mixing until you achieve a smooth, thick but pourable consistency. If you prefer a thinner drizzle, add a tiny bit more milk, but be careful not to make it too runny.
  8. Drizzle and Serve: Once the muffins have cooled slightly and the icing is ready, generously drizzle the cream cheese icing over each monkey bread muffin. These are best served warm, allowing the glaze to remain soft and gooey, but they are also absolutely delicious at room temperature. Enjoy your homemade, effortless monkey bread muffins!

Top Recipe Tips for Perfect Monkey Bread Muffins

  • Crucial Cooling Time: Do not rush the cooling process! Letting the muffins rest in the pan for 5-8 minutes after baking is vital. This allows the hot brown sugar glaze to cool and set, firming up around the dough pieces. Attempting to remove them too soon will likely result in the muffins falling apart, leaving all that delicious gooeyness stuck in the tin. Patience here pays off!
  • Smart Shortcut for Icing: While our homemade cream cheese icing adds a fantastic touch, you can absolutely use the small tubs of icing that typically come with store-bought cinnamon roll dough if you’re truly pressed for time or prefer a simpler option. Just warm it slightly if you want it to drizzle easily. However, making your own offers a richer flavor and allows you to control the sweetness and consistency.
  • Biscuit Dough Alternative: If you prefer, or if cinnamon roll dough isn’t available, you can easily substitute traditional refrigerated biscuit dough. Just follow the exact same instructions for cutting the dough and coating it in cinnamon sugar. The texture will be slightly different – less sweet initially, but still incredibly delicious with the brown sugar glaze.
  • Halve the Recipe with Ease: This recipe is perfectly adaptable for smaller batches. If you only need 6 muffins, simply use 1 tube of cinnamon roll or biscuit dough and halve all the other ingredient quantities for the glaze and icing. It’s perfect for a small family breakfast or a quiet weekend treat.
  • Don’t Forget the Baking Sheet Below: As mentioned in the instructions, placing a foil-lined baking sheet on the rack below your muffin tin is a non-negotiable step. The bubbly, buttery glaze can sometimes overflow during baking, and this simple precaution will save you from a sticky, burnt mess at the bottom of your oven.
  • Room Temperature Ingredients for Icing: For the smoothest, most lump-free cream cheese icing, ensure your cream cheese is softened to room temperature. This allows it to mix effortlessly with the powdered sugar and milk.

Delicious Variations & Creative Add-Ins

While these Monkey Bread Muffins are fantastic on their own, don’t hesitate to get creative with additional flavors and textures:

  • Nutty Crunch: Before pouring the glaze, sprinkle a tablespoon of finely chopped pecans or walnuts into the bottom of each muffin cup. The nuts will toast slightly and add a wonderful crunch.
  • Fruity Twist: Add a few small pieces of chopped apple or a handful of fresh blueberries to the cinnamon-sugar coated dough before placing it in the muffin tin for a burst of fruitiness.
  • Chocolate Lover’s Dream: Mix in some mini chocolate chips with your cinnamon-sugar dough. The chocolate will melt into gooey pockets during baking.
  • Maple Glaze: For an alternative to the cream cheese icing, consider a simple maple glaze. Whisk together powdered sugar with a tablespoon or two of maple syrup and a splash of milk until smooth.
  • Spice It Up: Add a pinch of nutmeg or cardamom to your cinnamon-sugar mixture for an extra layer of warm spice, especially delightful during the fall months.

Storage & Reheating Instructions

These Monkey Bread Muffins are best enjoyed fresh and warm, but any leftovers can be stored and savored later. Place any remaining muffins in an airtight container at room temperature for up to 2-3 days. If you live in a warm climate, or for longer storage, you can refrigerate them for up to 5 days. To bring them back to their warm, gooey glory, simply place one in the microwave for about 15-20 seconds. Be careful not to overheat, as the glaze can become too molten. They can also be briefly warmed in a toaster oven at a low temperature.
