Ingredients 

For the Chicken:

  • 4 thinly-cut chicken breasts
  • 1/3 cup all-purpose flour
  • Salt and pepper to taste
  • 2 Tablespoons olive oil

For the Mushroom Sauce:

  • 2 Tablespoons butter
  • 16 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 Tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1/3 cup heavy cream
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions 

  • Season both sides of the chicken breasts with salt and pepper.
  • Pour the flour into a plate or a shallow bowl, and lightly coat each piece of chicken. Shake off any excess flour.
  • Heat a large skillet over high heat, then add the olive oil to the pan. Once hot, add the chicken and cook for 2-3 minutes on each side, until browned. Remove the meat from the pan and keep warm.
  • Place the pan over medium-high heat and add the butter. When the butter is melted, add the mushrooms and cook for about 5 minutes, until the cook down and begin to soften.
