The statistics surrounding childhood obesity are truly sobering. According to the Partnership for a Healthier America, approximately 12.5 million U.S. youth are obese, with an additional 11 million classified as overweight. These figures represent a staggering public health challenge that demands our immediate attention and concerted efforts. The long-term consequences of childhood obesity, including increased risks of type 2 diabetes, heart disease, and various psychosocial issues, underscore the urgency of promoting healthier lifestyles from an early age.

In our community, we are fortunate to have strong support for youth activity. Our city champions healthy living through initiatives like free kids’ races held throughout the summer months and free biking events specifically designed for children. Notably, nearly every road in our city features designated bike lanes, making active transportation both safe and accessible. This infrastructure plays a vital role in encouraging children to be physically active as part of their daily lives. I strive to exercise almost every day, not just for my own health, but also to set a positive example for my 8-year-old son. I want him to understand that being active is an integral, natural part of a healthy life. His school further reinforces these values with its annual “Schools on the Move” challenge, which instills good habits in students from a young age.

However, promoting physical activity is only half the battle. What children eat is equally critical. This incredibly easy and flavorful recipe uses store-bought ravioli as a shortcut, allowing you to get a delicious tomato and balsamic pasta on the table in under 20 minutes. It’s the perfect solution for busy weeknights!

Ingredients 

  • 1 14 oz can petite diced tomatoes
  • 1 large tomato, diced (for fresh flavor and texture)
  • 1/4 cup red onion, diced (adds a subtle bite)
  • 1 Tablespoon olive oil
  • 2 Tablespoons balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 oz Ravioli, (any variety works, chicken & cheese ravioli offers a hearty touch)
  • 2 Tablespoons fresh basil, chopped (for a burst of aromatic freshness)

Instructions 

  • Begin by heating the olive oil in a large skillet over medium heat. Once shimmering, add the can of petite diced tomatoes and the finely diced red onion. Sauté this fragrant mixture for 5-7 minutes, allowing the onions to soften and the flavors to meld beautifully.
  • While your tomato and onion mixture is simmering, prepare the ravioli. Bring a large pot of salted water to a rolling boil and cook the ravioli according to the package directions until al dente. This usually takes only a few minutes for fresh ravioli, making it incredibly fast.
