To make these turkey roll ups, you will need avocado, salt, lemon juice, tortillas or wraps, spinach leaves, Swiss cheese, sliced turkey and cooked bacon.
How Do You Make Turkey Roll Ups?
To make this turkey rollup recipe, first cut your avocado in half and remove the pit. Scoop out the flesh and place it in a medium bowl. Add a little salt and lemon juice. Mix everything together until the avocado mixture becomes smooth. Spread the avocado mixture across your tortillas. Layer the turkey slices, spinach, bacon crumbles and Swiss cheese slices on 2/3 of the tortillas. Tightly roll the tortillas starting with the end with the toppings. The part of the tortilla with just the avocado acts as the “glue” to hold the sandwich together. Cut the rolled tortillas into slices and enjoy!

Tips For The Perfect Turkey Roll Ups
- I use either an uncured center cut bacon or turkey bacon for a leaner sandwich.
- If you don’t have any avocados on hand, a thin layer of cream cheese is also delicious.
- Make sure you purchase a ripe avocado that has a little give when you touch it, but is not mushy.
- You can use store bought avocado dip or mild guacamole instead of mashing your own avocado.
- Be sure to roll your sandwiches from the end with the toppings to the end with only the avocado. The part with only the avocado sticks to the tortilla helping to hold your roller sandwiches together.
- If you have trouble holding your sandwiches together, you can pin the slices together with toothpicks. Just remove them before you eat the roll ups!
- These roll ups can be made up to one hour before you plan to serve them. Simply cover the rolls in plastic wrap and refrigerate, then slice when you’re ready to serve.

Use a sharp knife to cut even slices from your roller sandwiches.

- Veggies: Add your favorite thin sliced or shredded veggies like carrots, bell peppers and red onions.

Turkey Avocado Roll Ups

Ingredients
- 2 large tortillas or wraps I used spinach flavored wraps
- 1 avocado medium size
- 1/2 lb thinly sliced smoked turkey
- 1 1/4 cups spinach leaves
- 4 slices Swiss cheese
- 3 slices bacon cooked and crumbled (I use turkey bacon or uncured lean center cut bacon)
- 1/2 teaspoon lemon juice
- 1/4 teaspoon salt
Instructions
- Cut your avocado in half. Remove the seed. Scoop out the flesh and place it in a medium bowl.
- Add lemon juice and salt to your avocado and mix everything together until the avocado reaches a smooth consistency.
- Lay your tortillas flat. Spread half of the avocado mixture over each tortilla.
- Layer the turkey, spinach, Swiss cheese and bacon over 2/3 of each tortilla, leaving the last 1/3 with just the avocado on it.
- Starting at the end with all the toppings, roll each tortilla tightly.
- Slice into pinwheels and serve.
