  • Preheat oven to 350 degrees F (175 C).
  • In a small bowl combine all of the seasonings for the chicken (chili powder, cumin, garlic powder, salt, black pepper). Sprinkle evenly over both sides of the pounded chicken breast. Bake for 15-20 minutes, or until cooked through and internal temperature reaches 165 degrees F (74 C). Remove from oven, and thinly slice.
  • While the chicken is cooking, prepare the sauces. For the Chipotle Mayo, mix mayonnaise, chipotle in adobo (start with 1 tsp, add more to taste), salt, and black pepper together in a small bowl. Set aside. For the Southwest Barbeque Sauce, mix the smoky barbeque sauce and taco seasoning in a separate bowl. Set aside.
